New Restaurants in Bend, Oregon: What's Open Downtown

If you have been reading The Bulletin's dining coverage since January, you have seen roughly nine new Bend concepts announced, previewed, or teased. If you have been eating out, you have watched about half of them actually unlock their doors. The gap between announcement and open sign is the story of Bend's 2026 restaurant scene, and it matters because the wave is not landing evenly across town.

Three clusters are absorbing almost all of it: the Jackstraw block on SW Industrial Way, the downtown core along Wall and Oregon, and the Old Mill spine at Powerhouse Drive. Understanding which cluster is furthest along tells you where to actually go tonight, and which corners of the city are still six months from paying off the hype.

The Jackstraw Corner Quietly Became A Dining Block

The most consequential opening this year was not a restaurant. It was a corner. In mid-July, Bend Brewing Co. and Sisters Smoke & Meathouse opened the doors to a new concept: a downtown Bend bar, restaurant and meat market called the Way West. The collaboration is a 3,800-square-foot indoor and outdoor space on the first floor of the Jackstraw development, a 4.7-acre mixed-use project at 310 SW Industrial Way Road, just east of the Box Factory.

That address matters because it is not alone. Next door to the Way West, Sisters Coffee Company opened their newest location in April. Two anchor tenants from established Central Oregon brands, on the same first floor, roughly halfway between downtown proper and the Old Mill District. Sisters Smoke & Meathouse is a butchershop, smokehouse and deli with two other locations, one in Redmond and one in Sisters. Now, its Bend customers can visit a location of their own. The Way West also marks the third location for Bend Brewing Co., the city's second-oldest brewery with its landmark location in downtown Bend and its sister location, the Waypoint brewery.

The Way West's own general manager put the geography plainly. The location, halfway between downtown and the Old Mill District, ensures walkability and visibility, Packy Deenihan said. If you have lived here long enough to remember when Industrial Way felt like a service road, that framing is the shift.

Downtown's Replacement Math

Downtown Bend is not adding restaurants so much as swapping them. Four of this year's most watched openings are occupying spaces that closed inside the last eighteen months, and the pattern is worth reading as a map.

The Hudson is the most closely watched of the four. When 900 Wall closed its doors in downtown Bend in May, it left a significant void to fill. The closure was deeply felt by the community where it had operated for 17 years, hosting diners for special occasions and serving up plates of crispy green beans and oysters on its happy hour menu. Its successor will be The Hudson, a live-fire chophouse led by Chef George Morris. Morris left his role as chef and part owner of Sixtop Restaurant Group in late 2024, which at the time included Bos Taurus, Nome Italiano, Miyagi Ramen. And while Morris specialized in steak at Bos Taurus, the new restaurant will expand its expertise to a wide range of proteins including pork, lamb, wild game and seafood. There'll also be an oyster and caviar bar.

East Bend got its own headline concept in the spring. Mountain View Roadhouse has opened its doors in East Bend, taking over the former location of "The Phoenix." The new restaurant features a broad, roadhouse-style menu designed to serve families and large groups. The establishment is one of the few restaurants in Bend to remain open past 9 p.m., serving its full dinner menu until midnight from Friday through Tuesday. That midnight close is the detail locals are actually trading. Late-night full-menu options in Bend can be counted on two hands.

Open Tonight Versus Open Someday

Here is the working list, as of early August, for anyone who wants to sort the "already there" from the "still coming."

Actually serving food right now:

• The Way West at 310 SW Industrial Way (mid-July open)
• Sisters Coffee Company at the Jackstraw (April open)
• Mountain View Roadhouse at 594 NE Bellevue Dr (April open)
• The Hudson in the former 900 Wall space (soft-open phase through Q1, now operational)
• Elmer's near the Bend River Promenade at 3098 Highway 97 (reopened fall 2025)

Confirmed, not yet open as of August:

• Bamboo Sushi at 125 NW Oregon Ave. Ava Brenneke, senior marketing manager, said that if construction stays on track, the Bend location will open in early March. Watch for a soft launch.
• Stacks Dinner & Delicatessen at 545 SW Powerhouse Drive in the Old Mill District. Owners of Zydeco Kitchen and Cocktails, Cheri and Steve Helt, were inspired to create the concept based on their time living in New York City. The Helts, working with Zydeco's Chef Eric Joppie and management team, will offer meats and fish, cured and smoked in-house, along with sandwiches stacked with pastrami.
• Powder Hound Doughnuts at 1366 NW Galveston Ave, from Matthew and Whitney Elliott.
• A second Haven Bagels and Coffee on Century Drive. The new shop will be located between the Oregon State University-Cascades campus and Terava Apartments on Century Drive. The bagel shop opened its first brick-and-mortar in August 2024 in Bend's Reed South development and is known for bagels made with clean, organic ingredients, espresso drinks and gluten-free options.
• Hangar 97 food truck lot at Murphy Road and Silverado Springs. An aviation-themed food truck lot named Hangar 97 plans to break ground next year on the corner of Murphy Road and Silverado Springs, next to the Bend RV Resort. It will offer a greater number of options for dining out on the south side of town, where the developer plans to host six food trucks. Next door to the food cart lot will be an indoor pickleball center to be named the Bend Pickleball Academy.
• A tea and art lounge at 1024 NW Bond St from Sarah and Zach Swoffer. All teas served will be sourced from locally owned businesses such as Inspired Leaf Tea and Metolius Tea, both based in Bend. According to the business's website, wife and husband Sarah and Zach Swoffer intend for their concept to serve as the "living room of Bend."

The Smoke Variable

Nobody planning a Bend restaurant year in 2026 expected the summer that arrived. Even after the devastating wildfires of 2020 and 2024, Oregon is on pace to make 2026 its worst fire year yet. And yet, the record-breaking year was not surprising to some. This past winter's paltry snowpack totals led to drought and tinderbox conditions across the state. Now, with more than 1.7 million acres already burned statewide before August, officials say 2026 could surpass the 2024 numbers if fire activity continues through the remainder of the summer.

The practical read for anyone eating out this month: the newer spaces are, on balance, better sealed. The Way West's 3,800 square feet includes a large indoor room, The Hudson's dining room is enclosed downtown space, and Mountain View Roadhouse runs a full indoor floor plan built for large groups. That is a real advantage when a DEQ air quality advisory rolls in, and this summer they have rolled in often. Long-term the trend line is uncomfortable. From 2000 - 2012, Bend had six days when air quality alerts were issued due to smoke from nearby wildfires. "In the next 10 year period from 2013 to present, Bend measured 101 days with an air quality index of unhealthy for sensitive groups or higher. New patio-heavy concepts open into a city where the patio window is measurably shorter than it was a decade ago.

The Festival Runway Is Where This Wave Gets Tested

The next eight weeks are the pressure test. Bend Oktoberfest is a single-day celebration of Bavarian culture featuring craft beer, music and quirky competitions. The event takes over the Deschutes Historical Museum lawn and adjacent streets. Date & time – Saturday, September 19 2026 from 2 p.m. to 9 p.m. The Bend Fall Festival is a vibrant celebration held annually in the heart of Downtown Bend, Oregon. Scheduled for October 3-4, 2026, this event showcases the beauty of the autumn season with a delightful array of activities for all ages. The BendFilm Festival celebrates independent cinema with screenings, panels and networking events across downtown Bend. The 23rd annual festival is confirmed for October 7 – 11 2026.

Every one of those crowds walks past The Hudson, Bamboo Sushi's Oregon Avenue address, and the Way West block on the way to a stage or a screening. The new operators are counting on it. If you want to see whether Bend's 2026 openings hold, that six-week window is where the answer is written.

What The Wave Is Actually Telling You

Read together, the pattern is not that Bend is adding restaurants. Bend is drawing a spine. Old Mill on one end, downtown Wall Street on the other, and the Jackstraw block acting as a hinge in between. The Powder House team is reinforcing the same corridor from the south. The owners of Powder House Bend are building a two-story taphouse/food cart lot behind their building off SW Century Drive which will have as many as 10 trucks and space for events and games. That is a coherent geography, and if you already live here, it is the map worth keeping in your head this fall.

One caveat that the industry itself is not hiding. The Source Weekly's 2026 restaurant guide notes that running a restaurant in Central Oregon in 2026 is not for the faint of heart; by nearly every account, it's harder than it has ever been. Announcements outrun openings. Openings outrun stability. Which is exactly why the concepts already serving food, with a summer of service under their belts, deserve the visit first.
